Zesty Creole Mustard Ale Sauce
1/4 cup Spicy Creole mustard
1/4 tablespoon medium-bodied beer
3 teaspoons honey
Pinch of sea salt

Horseradish Cream Sauce
1/4 cup mayonnaise
1/3 cup sour cream, yogurt or quark
1-1/2 teaspoon prepared horseradish
1 teaspoon cider vinegar
Pinch of sea salt
Pinch of sugar
Mix ingredients in bowl and serve.
Spiced Tomato Chutney
1 onion, finely chopped
2 cloves of garlic, crushed
1 red peppers, deseeded and finely chopped
1 fresh red chili, finely chopped
2 ripe tomatoes, chopped
1 tablespoon white wine vinegar
1 teaspoon soft brown sugar
2 teaspoons smoked paprika
1 teaspoon cinnamon
Put ingredients in saucepan and stir, bringing slowly to a boil. Simmer gently for an hour. Chill, or serve at room temperature.
